In the Corridor Towns, a Cuisine of Whatever Arrives

MERSIN — In the corridor kitchens that feed families moving along the heat routes, a new cooking has quietly taken shape — improvised, portable, built from whatever a given week's supply run delivers. "You cannot be precious about a recipe when you do not know what the truck brings," said Amara Diallo, who runs a communal kitchen serving several hundred meals a day at a Passage Trust way-station. What began as scarcity has become a style: dishes that borrow a spice from one homeland and a grain from another, named after the road rather than any country. With registered climate migrants now past 116 million and corridors widening through the hot months, these kitchens have multiplied into something like an institution. "A person who has lost their town has not lost their tongue," Diallo said. "You give them one meal that tastes of somewhere, even a somewhere that does not exist yet, and you have given them a small piece of home back." The corridor cooks trade recipes the way they trade news. Both travel fast.
